Soft Chocolate Chip Cookies

A couple days ago I made some Chocolate Chip Cookies. My mom remembered that she had seen a recipe for softer cookies. It had a special ingredient in it, and it was cornstarch. They are really good. My dad said they were some of the best Chocolate Chip Cookies he's ever had.

Chocolate Chip Cookies with Cornstarch

       3/4 cups unsalted butter softened
       1 cup brown sugar
       1/4 cup granulated sugar
       1 egg
       2 teaspoons vanilla extract
       2 cups all purpose flour
       2 teaspoons cornstarch
       1 teaspoon baking soda
       1/2 teaspoon salt
8 ounces bittersweet chocolate, cut into chunks (I used 2 cups of chocolate chips)

Directions:
Preheat oven to 350 degrees. Cream together butter and sugars until smooth. Add egg and vanilla and blend in. Stir in flour, cornstarch, baking soda and salt. Stir in chocolate chunks (or chips). Drop by tablespoons onto a greased baking sheet and bake for 8-10 minutes (it took a little longer in our oven), until golden brown around the edges. Enjoy!

The recipe turned out so well, I think I am going to make these as my birthday treat next week at school. Do you have any Chocolate Chip Cookie recipes that you like best? I'd love it if you'd share them.

Remember, you're never too little for big ideas!
